help with silhouette

I am new at scal but love it I am working on a project and would like to see if anyone could help me my granddaughter is 7 and she lost her other granddad (my son in laws father) in a tragic accident last month and she asked me if I would do a scrapbook of her and her granddad so she could always remember him. So I have this picture of him and her he is holding her and looking towards heaven and I would love to do a shilouette of this picture and cut it out no background I dont have a clue where to start could someone walk me through this or perhaps if I email you the photo you could create a cut file for me. I recall searching on the web for something similar a while back... I found how you could convert a photograph to a 2-tone image using Photoshop. Another way would be to use a lasso tool and fill in. Others may have better ideas. You do need a steady hand for the second idea.
