simple tracing of text

Is there a way to use the pens & just write a message without it tracing each letter? I thought the Convert Text to outlines would work. I'm sure I've missed something. Is there a tutorial for the feature?

You need to choose a single line (actually faux single line since all true type fonts are outlines). I have some free ones listed on my blog and more info on this.
